I'm making chicory mash using my parents' recipe as part of the "National Kvass Distillate" project. Kvass is made the same way—the recipe is below.
5 liters of water, 2 tablespoons of chicory, 1 teaspoon of citric acid, 500-650 g of sugar. Combine everything and bring to a boil. Cool, add 6 g of Saf-Moment dry yeast, and refrigerate for at least overnight. The kvass is ready—just like the old barrel!
