The Miyabi Mizu 9.5" Kiritsuke is a Cutlery and More exclusive made in Japan with premium materials. The Mizu line represents very high value for home and professional chefs looking to upgrade from knives that they already know how to take care of an maintain. The SG2/R2 stainless steel is sandwiched between SUS410 stainless layers and hardened to 63HRc. It sharpens up very well even on a king KDS 1K and I recommend shooting for a 1K-3K finish to take full advantage of the steel properties. The extremely flat cutting profile, combined with its length and geometry make for a great prep knife when working with large amounts of ingredients.

This example did come with a severe recurve in the back half of the blade making it unusable on the board. I repaired it myself in about 2-3hrs so the factory knife may vary slightly from my modified version. Both Cutlery and More and Zwilling/Miyabi offered to replace it at no cost after I had already modified it so buy with confidence and trust in their lifetime warranty.
