Let's start with a diet for patients with gallstones. I won't list foods, but will focus on principles that, once understood, will help you choose your own diet. There are two principles: 1 - avoid fatty, fried, and spicy foods; 2 - eat frequently but in small portions.
The diet after gallbladder removal can be divided into three main stages: 1 - the early postoperative period; 2 - the first month after surgery; 3 - the entire period thereafter.

The diet for gallstones is much stricter than that for patients after surgery, and failure to follow it can lead to acute gallbladder inflammation and emergency surgery. There are no restrictions on diet in the late postoperative period after gallbladder removal, other than those required by healthy eating principles.
However, remember that only the surgeon who performed your surgery can provide individualized dietary and lifestyle recommendations.

Appendix
Postoperative Diet
1st day after surgery: low-fat kefir, a glass of chicken broth.
2nd day after surgery: low-fat kefir, chicken broth, jelly, porridge with water (semolina, oatmeal).
3rd day after surgery: low-fat kefir, chicken broth, jelly, porridge with water (semolina, oatmeal), boiled chicken (turkey), lean boiled fish, boiled potatoes.
1st month after surgery:
Oils and fats: Allowed: olive oil. Avoided: lard, shortening, margarine, sunflower oil to a limited extent. Soups: Allowed - Vegetable soups, soups made with weak chicken or lean fish broth. Avoid - Red meat broth, mushroom soups, shchi, and borscht.
Meat: Allowed - Chicken breast, turkey, and veal in small quantities, preferably steamed, and bologna sausage. Avoid - fatty meats such as pork, lamb, bacon, smoked and dry-cured sausages, canned meats, frankfurters, and sausages.
Fish: Allowed - lean varieties such as cod, pike perch, carp, salmon, etc. Avoid - fatty white fish such as catfish and sturgeon.
Dairy: Allowed - low-fat kefir, yogurt, and sour milk. Avoid - cream, sour cream, and whole milk.
Eggs: Allowed - no more than 1 soft-boiled egg per day. No hard-boiled or raw eggs, fried eggs.
Vegetables: Yes - Fresh: carrots, greens, cucumbers.
Cooked: beets, potatoes, cabbage, zucchini, eggplant, onions, etc. No - Pickled vegetables, marinades. Legumes. Sorrel. Raw garlic, onions, ginger, radishes.
Fruits: Yes - Sweet and ripe fruits (limited). Dried fruits. No - sour and unripe.
Sweets: Yes - Honey, jam, pastilles, marmalade (limited). No - chocolate, candies, cakes, pastries, ice cream.
Sauces and appetizers: Yes - jellied fish with gelatin, soaked herring, salads with olive oil. No - ketchup, mayonnaise, mustard, vinegar, horseradish, smoked meats, mushrooms.
Porridges: Allowed: Buckwheat, oatmeal, rice, semolina. Liquid porridges, preferably with water. Avoid porridges with butter or cream.

This diet is designed for approximately one month. After that, you can return to your normal diet. If you continue experiencing digestive issues after a month, consult your surgeon or gastroenterologist.
