Hello! Cardamom is an herbaceous plant with an underground tuber, similar in appearance to galangal. In Thailand, it's abundant in the southern and eastern regions, such as Chanthaburi. If you pass through Khao Soi Dao in Chanthaburi, you'll see many locals selling cardamom plants. Chanthaburi residents commonly use young cardamom stalks in curries, stir-fries, and tom yum soup, adding a wonderful aroma and flavor to the dishes.
Cardamom flowers have narrow, yellow tubular petals and large white petals with a yellow band in the center. The fruit is relatively round, creamy in color, and has about three lobes. Young fruits are hairy, with the hairs falling off as they mature. Ripe fruits split open, revealing many small seeds inside. Young seeds are white with a membrane covering, while mature seeds turn black. Both the fruit and seeds of cardamom are fragrant.
Cardamom has medicinal properties that can be used in almost every part of the plant. Starting with the "roots," they can be used to purify blood, relieve flatulence, and treat gum disease. The "bulbs and shoots" help expel parasites from the body through the skin. The "bark" helps relieve fever, treat skin diseases, and expel phlegm. The "heartwood" can be used to remove toxins and treat blood poisoning. Cardamom "leaves" are beneficial as a tonic and are used to treat indigestion, bloating, and flatulence.
How to use cardamom: Young shoots and unripe fruits can be eaten fresh as vegetables. They can be roasted and eaten with chili paste or used in curries.
Dried mature fruits can be used as a spice, flavoring, and coloring agent in a variety of dishes such as cakes, cookies, pâté, bread, ham, pickled foods, liquor, and all types of meat.
