The BEST lemon raspberry bars (Better than traditional lemon bars)

For today’s recipe we are putting a fun spin on traditional lemon bars and making easy lemon raspberry bars! The raspberries add a lovely flavour and a fun pink hue to this easy 8 ingredient lemon bar recipe. The result is a tangy lemon bar with the perfect hint of raspberry flavour and a nice soft buttery crust! Raspberry lemon bar ingredients:
Base:
1/2 cup butter (salted)* softened to room temperature 113g
1/3 cup powdered sugar 35g
1 cup all purpose flour 130g
*If using unsalted butter add 1/4 tsp salt

Filling:
2 large eggs 100-120g
3 large egg yolks 50g
1/2 cup fresh raspberries 60g
1/3 cup fresh lemon juice 75g
1 tbs fresh lemon zest 6g
3/4 cup sugar 75g
3 tbs flour 24g

Lemon bar filling directions:
Combine lemon juice and zest and set aside. Preheat oven to 325f/160c. In a large bowl cream butter until smooth. Add powdered sugar and mix until well blended. Add flour and mix until large crumbs form and the dough begins to come together. Line an 8x8 pan with parchment. Press the dough into the pan, ensuring you get it as even as possible. Bake 16-18 minutes in 325f/160c oven until the edges are golden brown. After removing from oven carefully poke holes in (but not through) the crust. This helps the filling stick to the base. While this bakes begin preparing the filling.

To the lemon juice and zest add the fresh raspberries. Use an immersion blender (a food processor, mixer or even a whisk would also work) and blend until well pureed. Strain this into a medium bowl to remove the seeds. Add eggs, egg yolks, sugar and sifted flour. Mix until well combined, 2-3 minutes. Pour over baked crust and return to the oven to bake for 20-24 minutes, or until the lemon filling is just set. It should be a little jiggly in the middle. Allow baked bars to cool at room temperature for at least 30 minutes and then chill 4 hours before cutting and serving. After chilling dust top with powdered sugar and cut into squares. Enjoy!
