Atari Falcon, Cubase Score and Cubase 12 for MacOS.
I think I've found a nice setup using the Falcon 030 and Cubase Score as the MIDI recorder, and my Mac, also running Cubase, as the sound source. The Keylab MKII makes browsing patches as easy as using real gear, so for now, I'm happy.
