Here it's important to understand what exactly Buddhists avoid, as the main problem isn't alcohol itself as a substance.
The problems are:
1) the bad things people do while intoxicated, especially when they're very intoxicated.
2) the direct harm to health itself.
3) and the reduced ability of the intoxicated mind to practice.
The act of will, when a person decides to get drunk, creates karma, which will mature under certain conditions. And this isn't mysticism; it's a cause-and-effect relationship.
Therefore, it is reasonable to abstain from these actions. This is what the Buddha recommended.
But what happens if you don't abstain from alcohol, and don't observe the lay vows at all?
First of all, if you were a Buddhist, you DO NOT stop being a Buddhist because of this.
But when a Buddhist feels sick in the morning from drinking the night before, or gets into trouble because of alcohol, a Buddhist understands that this is a consequence of their own actions, their responsibility, their self-created karma. They might not have created it, but they did.
And how much is acceptable to drink?
As we understand, the state of intoxication itself creates problems.
Therefore, if you enjoy the taste of beer, and many claim you do, it's perfectly safe to drink non-alcoholic beer. Or light, low-alcohol beer, and not too much, not to the point of intoxication.
Similarly, if you're in a drinking group, at a celebration, say, a wedding, then half a glass of wine or 0.3 of beer is fine. You're fitting in with the social scene and not getting drunk.
But! Important! This is a difficult moment that requires exceptional self-control and self-control—determining how much is enough and not reaching for another glass or another bottle.
If you're unsure of your ability to maintain this level of self-control, and don't feel strong enough, then it's easier to abstain from alcohol entirely.
