RECIPE:
Ingredients
2 liters of whole milk (preferably type A)
¼ cup of white vinegar (60ml)
Salt to taste
Bring the milk to a boil over medium heat. When it comes to a boil, turn off the heat and add the white vinegar. Mix well and let it sit for 15 minutes. Add salt to taste and mix. In a bowl, place a sieve and a thin cloth, such as a tea towel, in the bowl. Pour the mixture over the cheesecloth, draining off all the whey. Make a small bundle with the cloth and squeeze out the excess. Discard the whey and place the cheese in a 13cm diameter bowl, pressing down with a spoon. Refrigerate for about 3 hours and then unmold.
Yield: approximately 1 400g cheese.
