1 lb Italian sausage or ground beef/turkey)
1/2 red onion, diced
2-3 jalapeños, diced
2 cans rotel mild tomatoes and green chiles
8 oz sharp cheddar cheese, cubed
4-6 oz mozzarella cheese, cubed
Velveeta cheese, cubed
Milk or heavy cream, if needed to loosen
Fresh chopped cilantro, for garnish
