The Best Mushroom Truffle Risotto! 🇮🇹😍
I've had a lot of risotto's over the years and this is the best one yet! Don't be intimidated by risotto, with a little persistence you can master this delicious classic in no time!!
Ingredients:
Arborio Rice (1.5 cups)
6 cups low sodium chicken stock
1/2 cup white wine
2 tbsp unsalted butter
1 tbsp fresh thyme leaves
2 cloves of garlic minced
1 large (or 2 small) shallots diced
8 ounces of Baby Bella mushrooms sliced (or your favorite)
Olive oil (3 tbsp)
Black truffle oil (1 tbsp)
Kosher salt
Fresh cracked black pepper
Fresh grated Pecorino Romano cheese
