CAKE MIX:
200g unsalted butter
250g caster sugar
60g desiccated coconut
1 vanilla pod
1/4 tsp salt
4 large eggs
180g ground almond
WATER GANACHE
60g chocolate 70%
25g caster sugar
25g liquide glucose
3 tbsp water
1/4 vanilla pod
25g unsalted butter
toasted flaked coconut crisps for decoration.
