How to make the perfect Buttercream Icing

You only need to watch this video to learn how to make the perfect buttercream.

SERVINGS:
Makes enough to fill 1 large cake or 12 standard size cupcakes.

INGREDIENTS:
• ⅔ cup (150g/5oz) butter, softened.
• 2¾ cups (340g/11 ½oz) icing/powdered sugar, sieved.
• 1-2 tbsps milk or water.
• ½ tsp of vanilla extract or flavour of choice.
• Optional: Gel colouring, if using.

METHOD:
1. Beat the softened butter in a medium-size bowl until it turns white.
2. This should take about 5 minutes.
3. Scrape down the unwhipped butter from the sides of the bowl and whip again for 1 minute.
4. Add two tablespoons of sifted icing/powdered sugar.
5. Whisk for 1 minute before adding another two tablespoons and whisk again. Do this until all the icing sugar has been incorporated.
6. Using a spatula scrape down the sides of the bowl.
7. Add 1-2 tablespoons of milk or water depending on the consistency you want.
8. Add the vanilla extract and the gel colour if you're colouring your buttercream.
9. Whisk again for about 5 minutes.
10. Spread out on your cake or place in a piping bag to decorate.
11. Mmm Scrummy!!!

STORAGE:
• Buttercream can be kept at room temperature in an airtight container for 2-3 days.
• Buttercream can be stored in a fridge for up to two weeks.
• Buttercream can be frozen for 3 months.
