Field creation with AI - FS22 | Having fun with AI angles and grass bales will never be enough
So apparently in FS22 AI has 16 angles, 22.5° apart, this explains why they can't keep with exact border you've chose to create a field or do anything else lined up on a field for that matter. They just choose the closest angle available and go for it.
