How to make Cream Cheese Frosting

SERVINGS:
Makes enough to fill 1 medium-size cake and 12 standard size cupcakes.
INGREDIENTS:
• ½ cup + 1 tbsp (125g/4 ½ oz) butter, room temperature.
• ¾ cup 2 + 2 tbsps (125g/4 ½ oz) icing sugar/powdered sugar.
• 1 cup + 1 tbsp (250g/8 ½ oz) full fat cream cheese.
• 1 tsp vanilla extract.
METHOD:
1. Place the room temperature butter in a medium-size bowl and mix with a hand mixer/stand mixer until the butter is nice and soft.
2. Add half the icing sugar and mix until fully incorporated.
3. Add the remaining icing sugar and mix again.
4. Add the vanilla extract and mix for about 5 minutes.
5. Add the cream cheese frosting and fold (do not whisk) the cream cheese gently into the butter & icing sugar mixture until it comes together.
6. Store in the fridge until you're ready to use.

STORAGE:
• Cream cheese frosting can be kept in the fridge for up to 3 days.
• It can also be frozen for up to 3 months in an airtight container.
