There are two types of black caviar: milk-produced and farmed. In most cases, you won't find natural black caviar in the store. All caviar on the shelves comes from farmed sturgeon. Farmed caviar is cheaper; it is obtained from the fish without killing them. First, the roe's readiness and quality are determined using ultrasound, and then it is extracted with gentle pressure. After this, the fish are released to continue their swims on the farm. Farmed caviar is more expensive. Typically, older fish, which no longer produce as much caviar, are sent for slaughter, but the older the sturgeon, the tastier and more valuable its caviar, hence the price.
