EVERYONE LOVES CHIPS! So this week I’m bringing you a healthier version of the classic Indo Chinese style chips that you get in restaurants in India! Hand cut chips are traditionally double deep fried, but this version uses oven chips which is both healthier and quicker (it’ll only take you 10 minutes) and doesn’t compromise on taste either!! Take your chip game to another level and enjoy as a starter or as a side!

RECIPE (SERVES 3)
450-500g oven chips/fries
2 tbsp oil
2 tbsp sesame seeds (1 reserved for garnish)
1/2 small red onion finely chopped (55g)
2-3 cloves garlic chopped finely
2-3 green chilli chopped finely
½ green pepper chopped in cubes
½ red pepper chopped in cube
1 tbsp of maple syrup or sugar to taste (optional)
1-2 tbsp chilli sauce
(add more if you like it even hotter)
2 tsp soya sauce
1 tsp red wine vinegar /rice vinegar
/ vinegar
1 tbsp ketchup
¼ tsp black pepper
1/2 tsp salt or to taste
1 tsp cornflour
50 ml water
2 tbsp spring onions greens (for garnish)
METHOD
Place approx 450-500g chips on a baking tray and cook in the oven as per instructions.
Chop your veg and then when there’s only 5 minutes left for the chips to be done make the chilli sauce…
For the Chilli Sauce -
Heat oil in a pan. Add garlic and green chilli and fry for 30 seconds on a low- medium heat. Then add the sesame seeds and fry for 30 seconds. Add red onion and also fry for 30 seconds.
Now add the green and red peppers and fry for 1 minute.
Next add the maple syrup or sugar, (omit this is if you prefer it HOT and add more chilli sauce), chilli sauce, soya sauce, vinegar, ketchup, black pepper, salt and stir well. (You could also add more ketchup if you don’t like it too hot and don’t want to use a sweetner).
In a bowl, add 1 tsp of cornflour and 50 ml water and mix well. Then add this cornflour water to the pan. Stir and mix well for about 30 seconds until sauce thickens. (If you prefer the chips more saucy add more water. I prefer them like this and like to add more fresh green chilli so that the chips aren’t too soggy!)
Now add the cooked chips and mix well coating them evenly.
Finally garnish with reserved sesame seeds and spring onion greens, and serve as a starter or as a side!
