Hummus is a popular Middle Eastern dish, said to have originated in ancient times. Its earliest recipes trace back to as early as the 13th century. It is made from boiled chickpeas blended together with garlic, lemon juice and Tahini. It is usually garnished with some extra virgin Olive oil and Paprika, but various spices are used across cultures. It is commonly eaten with Pita, it could also be served as a spread and a dip. INGRIEDIENTS 🥣🧂
~ Makes 3 to 4 portions
Chickpeas (Kabuli variety): 1 cup
Garlic: 4 to 6 big cloves
Tahini: 2 tbsp [Recipe Link Below]
Lemon Juice: 1 tbsp (1 small sized)
Olive Oil (Extra Virgin): 2 tbsp
Salt: 2 tsp
DETAILED RECIPE 🧑🏻🍳
• Start by soaking the chickpeas in water for at least 8 hours. The chickpeas puff up almost 3 times in size when soaked for 12 hours and helps to cook the legumes well.
• Boil the soaked chickpeas till they are soft, but not mushy. This might sound a little wrong but it helps to make a creamier Hummus if the chickpeas are a tad overcooked.
• The secret to a velvety Hummus is removing the skins of the chickpeas; this might take some extra effort and time. We have found an easy way to do this. Take the cooked chickpeas in a large bowl of water and run your fingers lightly though them, the skins will gradually come floating at the top. Collect them and discard. However, you could totally skip this step if you are making Hummus for a regular day, it would still taste amazing!
• Transfer the chickpeas in a food processor jar. If you do not have a food processor, use a blender jar. Add Garlic, Salt, Lemon juice and Tahini [Recipe Link Below] and run it on low speed till it forms a paste.
• Add Olive oil and some ice cubes and continue blending. The Hummus will take around 7 to 8 minutes on low speed to turn soft and creamy. DO NOT add any water. The ice cubes will bring down the temperature inside while you are mixing and prevents any bitterness. Plus, it turns the Hummus fluffier and tastier.
• That's all it takes to make a delicious creamy Hummus at home. Plate it. Drizzle Olive oil, Tahini, Paprika and some chopped Parsley. Enjoy with a freshly made Pita or by itself.
