The citizens of Belobog flock to Goethe Hotel for tea time and a popular item on their menu is the Classic Brunch Combo. Fluffy Pancakes, Poached Eggs, Buttered Toast, Seasonal Fruit Jam, Tea of choice, BUT unfortunately they're out of Sour Bean Soup!

WRITTEN RECIPE
INGREDIENTS
Pancakes
- 2 cups all purpose flour
- 1/4 cup granulated sugar
- 4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 3/4 cup milk
- 1/4 cup butter (melted)
- 2 tsp vanilla extract
- 1 large egg
Poached Eggs
- 2 large eggs
- 1 tbsp white vinegar (optional)
- Water
Sides
- Sliced bread of choice
- Butter
- Fruit jam of choice
- Pancake syrup
- Tea of choice
- Milk
DIRECTIONS
Pancakes
- Combine dry ingredients into a large bowl and gently whisk together
- Add wet ingredients into bowl and carefully begin to whisk together until a lumpy batter has formed
- Preheat a pan on medium heat
- Oil pan if necessary then ladle pancake batter in
- Cook one side of pancake until bubbles are forming on top and edges are a bit dry (around 3 minutes)
- Carefully flip pancake and cook other side for 2 minutes
- Repeat until stack of pancakes is done (I made 3 pancakes per stack)
Poached Eggs
- Bring a saucepan of water to a boil on high heat then reduce heat to medium to keep water at a simmer
- Optionally add the white vinegar and stir in
- Create a vortex in the water by stirring with a spoon
- While water is moving, carefully drop a cracked egg into water and let it cook for 3 minutes
- Place finished poached eggs in a bowl of room temperature water until ready to assemble
Sides
- Toast bread and spread butter over
- Brew tea according to instructions
- Warm milk in microwave
Assembly
- On one plate, place stack of pancakes, poached eggs, and buttered toast
- On top of pancakes, place one slab of butter and a scoop of seasonal fruit jam then drizzle with syrup
- Enjoy with tea and milk!
