Dish With Trish: Pizza Pepperoni & Margherita

Antoinette and I hadn’t seen each other since the pandemic stay-at-home order in Los Angeles. This was such a fun reunion … I felt giddy and happy to see her again. We made pizza, opened a good bottle of red wine, and went on a live ZOOM with some of you!

Homemade pizza is another go-to dish for when you have friends over. It’s so crowd-pleasing, and easy to assemble .. Antoinette and I picked some fresh herbs from her garden, and here’s what we did …

INGREDIENTSPizza dough (either homemade or store-bought frozen dough)
Italian Gravy (see my previous post on this)
Grated Parmesan cheese
4 gloves Garlic, chopped
1 cup of Grated mozzarella cheese (add more or less to your liking)
Fresh Chopped Herbs - basil, rosemary, thyme, oregano and parsley
Pepperoni slices (the amount you like)

Preheat oven to 450-500º depending on your oven
Punch out the dough, stretch it and roll it out, be creative in creating round shape or best you can
If you have frozen dough, follow the maker’s instructions.
Put sauce on the dough, spread it on the dough covering the edges.
Sprinkle parmesan cheese on sauce.
Sprinkle some garlic on top.
Add fresh mozzarella cheese.
Add more sauce on top of this.
Add a little more parmesan.
Add the fresh herbs.
Add pepperoni to half of the pizza, unless you want it to be a full pepperoni pizza.
Put pizza in the oven’s top rack 10-15 minutes, depending on your oven. If you like well done, leave it longer. Eyeball it to your liking.
Take it out and let it cool for a few minutes, then cut with a pizza cutter.
