Creamy Lemon Pasta w/ Lemon Crusted Chicken ⏲🎞
Recipe:
3-5 chicken breasts (cut in half)
1 lbs pasta
Save 1/2 cup pasta water after boiling your pasta
Sauce:
3 tbsp unsalted butter
1/4 cup olive oil
6-8 cloves minced garlic
1 small onion minced
1/2 tbsp red pepper flakes
zest of 1 lemon
juice of half a lemon
2 cups simmered half and half
4-8 oz freshly grated parm (depending on your preference)
1 tsp onion powder
1 tsp garlic powder
1 tsp lemon pepper
1 tsp black pepper
(more red pepper flakes if you’d like)
salt to taste
1/4 tsp cayenne (optional)
Handful freshly chopped parsley
1/2 cup pasta water
TASTE* and adjust seasonings to your liking
Flour:
3/4 cup AP flour
1 1/2 tsp garlic powder
1 tsp onion powder
1 tsp lemon pepper
1/2 tsp salt
2 tsp Italian seasoning
1/2 tsp chili powder
1 1/2 tsp black pepper
Egg:
3 eggs whisked
zest of 1 lemon
1/2 tsp salt
Panko:
8oz Panko
1 tsp lemon pepper
1 tsp black pepper
1/2 tsp salt
Instructions:
Cut your chicken breasts in half, place over Saran Wrap, and pound down a bit
Coat each chicken piece in your flour mixture, then in your egg mixture, then right into your Panko mixture & make sure they’re all coated evenly!
Fry each piece in about 1 inch of oil. We just want to give it a nice golden color, so fry on medium heat for about 2 minutes on each side. After you’re done frying them, pop them on a try and bake at 400°f for 8-10 minutes or until your chicken is completely cooked
In a separate pan, sauté your garlic, onion, & red pepper flakes in your butter& olive oil for about 2-3 min
Then add in your lemon zest & lemon juice & sauté for another 2 minutes
Add in your simmered half and half and let it simmer for about 2-3 min. Then add in your Parmesan cheese, let it melt fully - then add in your seasonings & freshly chopped parsley
TASTE* and see if you’d like to adjust your sauce
Add in your cooked pasta as well as 1/2 cup of the pasta water we saved
Continue to let your sauce/pasta simmer until your happy with the thickness of your sauce!
