I'm with Turks in Siem Reap, Cambodia. Erhan Can, sporting an American World War II helmet and a tiny motorcycle, takes me to Elia's Restaurant. We chat with the staff, Emrah, Yeliz, and the owner, Yiğit. We tour this restaurant, which has been featured on Greek TV and in Cambodian newspapers, and has been voted the country's 12th best. Its cuisine, terrace, murals, and cleanliness make it seem out of place in Cambodia. We hear from the owners about the restaurant's history, their stories of coming to Cambodia, and how they got to where they are today. We discuss many topics, including whether it's easy to start a business in Cambodia, what life is like here, how long it takes to get used to it, what the challenges are, whether they miss Türkiye or are considering returning, what the food is like, whether they go on vacation, what they experienced during the pandemic, and the times they were left penniless abroad.

Cambodia's History
Cambodia's founding took place in the Mekong River delta around 150 AD. The Fu-Nan civilization is known as the country's first civilization and played a significant role in Cambodia's development through trade with China. Therefore, by the beginning of the 7th century AD, all of Cambodia was known to be highly civilized. The Khmer Empire was established in the country in the early 9th century. The Khmer, who believed that spirits inhabited natural phenomena such as the land and trees, made a significant step in Cambodian art history with the construction of the temple Angkor Wat in the early 12th century. The Khmer Empire, which began to decline in the mid-13th century, collapsed in the 16th century. Following the collapse of the Khmer Empire, Cambodia came under Thai rule.
The Kingdom of Cambodia, which was governed by Thailand, went to war with Vietnam in the 18th century. The king's turn to Vietnam sparked centuries of rebellions and civil wars. In the late 19th century, France took control of Cambodia, but growing rebellions led to Cambodia's independence in 1953. The country, which became the Khmer Republic in 1970, came under Khmer Rouge dictatorship in 1975. However, these years of oppression ended when Vietnam, which had achieved a socialist people's revolution, intervened in the Cambodian government.
What First Comes to Mind When Cambodia Is Mentioned
When Cambodia is mentioned, the first thing that comes to mind is the Angkor temples. Located within an archaeological park, this temple has been declared a UNESCO World Heritage Site. Angkor Archaeological Park is filled with hundreds of ancient temples, religious structures, and crumbling ruins dating back to the Khmer Empire. Angkor Wat, Bayon, and Ta Prohm are the main attractions in the country, attracting tens of thousands of tourists daily. Angkor Wat, the world's largest religious building, comprises just one strip of the park. The park was designed to encompass the entire ancient Khmer city. Built between 802 and 1432 AD, this city is known as the world's largest settlement during the Middle Ages. Cambodia has a rich culture and heritage worth exploring for visitors. The apsara dance, one of Cambodia's most distinctive features, dates back to Angkor times, and is known as the country's classical ballet. Various documents and artifacts attest to the existence of this dance form in the 7th century. These figures can be seen in the carvings at the Sambor Prei Kuk temples in Kampong Thom province, and are also known to exist in Phnom Penh and Siem Reap. There are several places where visitors can witness the dance in person, including the Apsara Theatre at Angkor Village Resort and the Fou-Nan in Siem Reap.
