First, you have to open DoomConfig.cfg (this file is placed in ~/Library/Application Support/Doom 3/base/) and write a new line there with this text: "seta com_allowConsole 1" (without the quotes). Then open Doom 3 and you can access the console with ~ / ^ (it's not the same key for each keyboard customization). You have to do this each time before starting Doom 3, because Doom 3 resets this file when you close Doom 3. But if you place a file "AutoExec.cfg" in this directory, and write the "seta …" inside, Doom 3 won't reset this and you can access console whenever you want.
