If you want to install GNOME, type this in Ubuntu Server:
sudo apt-get install ubuntu-desktop
If you want to install KDE, type this in Ubuntu Server:
sudo apt-get install kubuntu-desktop
If you want to install Xfce, type this in Ubuntu Server:
sudo apt-get install xubuntu-desktop
