Questi panini sono buonissimi!!!
Estremamente morbidi, con la mollica che si sfilaccia... sono perfetti da farcire con salame o prosciutto e formaggio a fette, ma personalmente li uso anche per fare i tipici panini da fast food con gli hamburgers e le salse!
Sono Meravigliosi e non servono uova ne latte!!! 😍
ingredienti per 16 panini
300 g farina 0
150 g farina 00
550 g farina Manitoba
12 g lievito di birra fresco
600 ml acqua
50 ml olio Evo
100 g strutto
50 g zucchero semolato
20 g sale fino
Sciolgi il lievito nell'acqua, aggiungi un cucchiaio di zucchero. Versa nel composto di farine, precedentemente mescolate, Versa lo zucchero restante, l'olio d'oliva e lo strutto.
Mescola tutto insisme in planetaria o a mano per cinque minuti o fino a che il. composto diventa abbastanza liscio. Aggiungi il sale e impasta altri due minuti.
Metti a lievitare per un'ora e poi copri con un panno di cotone e lascia lievitare in frigorifero per 18 ore .
Prendi l'impasto, dividilo in panetti da 110/112 g l'uno, stendili con il mattarello a forma di lingua poi arrotolali su se stessi. Disponi su una placca federata di carta da forno e lascia crescere fino al raddoppio ( io ho aspettato 3 ore).
Cuoci in fondo già caldo a 220 gradi per 18, max 20 minuti.
Sforna e tuffati su questi panini morbidissimi!!! Buoni, buoni,buoni!!!

Extremely soft, with the crumb falling apart... they are perfect to fill with salami or sliced ham and cheese, but personally I also use them to make the typical nuisance food sandwiches with burgers and sauces!
They are wonderful and you don't need eggs or milk!!! 😍
ingredients for 16 sandwiches
300 g 0 flour
150 g 00 flour
550 g Manitoba flour
12 g fresh brewer's yeast
600ml water
50 ml Evo oil
100 g lard
50 g granulated sugar
20 g fine salt
Dissolve the yeast in the water, add a spoonful of sugar. Pour into the previously mixed flour mixture. Pour the remaining sugar, olive oil and lard.
Mix everything together in a stand mixer or by hand for five minutes or until. mixture becomes quite smooth. Add the salt and knead another two minutes.
Leave to rise for an hour and then cover with a cotton cloth and leave to rise in the refrigerator for 18 hours.
Take the dough, divide it into loaves of 110/112 g each, roll them out with a rolling pin into the shape of a tongue then roll them up on themselves. Place on a lined baking paper tray and let it grow until doubled in size (I waited 3 hours).
Cook at the bottom already hot at 220 degrees for 18, max 20 minutes.
Remove from the oven and dive into these super soft buns!!! Good, good, good!!!
