Grilled Lettuce
1 head of little gem lettuce per person
1 tsp mustard
1 tsp soy sauce
1 tsp sugar or honey
Pinch of salt
Pinch of black pepper
1 tbsp vinegar
4-5 tbsp olive oil, plus some extra to brush over the lettuce heads
For your choice of garnish: some capers, dill, chives or parsley, pine nuts or other nuts, cubes of feta or other cheese..........
1. Stir the mustard, soy sauce, sugar, salt, pepper, and vinegar together well.
2. While stirring, add the oil until you have a nice dressing.
3. Heat the grill pan. Cut the lettuce in half lengthwise. Lightly brush the cut surface with oil.
4. Place the lettuce, cut side down, in the grill pan and cook for 2-3 minutes, until you have nice grill marks. Meanwhile, brush the tops of the lettuce heads with some oil. 5. Flip them over and fry them on the other side for another 1-2 minutes.
6. Place them on a platter and pour some of the dressing over them. Garnish as desired with herbs, cheese, or nuts....
