We're salting and drying fish. Today I salted and hung up some rotan. Two days ago, my wife and I caught a decent amount of good, large rotan while fishing. I have a video on my channel about salting rotan; I released it in 2017. So, I decided to update the video, without all the unnecessary talk and reasoning. Although there will be water in the video. We'll also need salt and potatoes—as an indicator of the brine's salinity. I use Yelets salt, the kind we sell here. Add salt to the water. Stir. The potatoes floated to the surface, indicating the tank. Excellent. You can use a chicken egg, but I prefer potatoes, so I'll use potatoes. The brine's salinity is always the same because we use potatoes as an indicator. If you're using an egg, please let me know. The brine will always taste the same, but you'll need to adjust the amount of time the fish is in the brine. I clean the rotan and cut it down the back so the entire carcass is evenly salted. I then soak the rotan in the brine for 20 minutes. I'm so confident in saying 20 minutes because, using the potato, I know how much salt to add and how long to leave it in the brine. I've done this many times and I like the saltiness of the fish. After 20 minutes, I transfer the fish to a colander to drain the excess water. I'll dry the fish near a radiator. It dries in a few days. Rotan has no odor, so my wife won't complain about the whole apartment smelling like dried fish. Thank you for watching this video; I'd be very happy if you like this method.
