Mandarin sponge roll with light quark and cream cheese filling

A crack-free Swiss roll!!! Not so easy. Today I'll show you how to make a super delicious summer Swiss roll without any cracks.
It's so delicious, you simply can't get enough of it.
Try it out, and you'll see what I mean.
Ingredients for the sponge base:
4 room-temperature eggs
1 pinch of salt
A little vanilla extract or 1 packet of vanilla sugar
100 g sugar
118 g flour
Ingredients for the filling:
250 g mascarpone
250 g quark (or cream cheese)
200 g heavy cream
60 to 80 g powdered sugar
6 tsp San-apart (or similar stabilizer)
