This Ground Beef Enchilada recipe is one of my family's favorites. This easy entree recipe can easily be made ahead or doubled and frozen for an easy dinner.

1 pound ground beef
1 yellow onion diced
1 tablespoon Taco Seasoning
2 cups Enchilada Sauce
8 tortillas enchilada size
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
