1. Beef Sirloin Steak, Reverse Sear
Ingredients & Instructions:
Beef Sirloin Steak (thick steak for reverse sear)
Salt
For searing:
Canola oil
For basting:
Butter 75 g / 2,65 oz
1 Solo Garlic (grated)
Fresh Thyme
1. Take beef to room temperature 1 hour before cooking
2. Salt the steak and put meat thermometer on the thickest spot
3. Put the steak in the oven. Oven temp 125°C / 255°F
4.Take from the oven when steak inner temp is 57°C / 135°F
5. Use paper etc to get excess moisture off
6.Heat the pan up to high heat and add some cooking oil
7. When pan and oil is heated add the steak in pan
8. Sear 1 minute then flip steak around and sear again 1 minute. Then sear also the sides
9. Take steak off from pan and lower pan temp to medium heat
10. Add some butter, grated garlic and thyme and mix well
11. Add steak back to pan and baste for a while on medium heat
12. Take the steak off from pan and Let the steak rest on plate for 5-10 minutes. During this you can make the sauce
13. Serve the steak as a whole or cut it ready and serve. If course with that sauce on the side.
2. How to cook Pork Tenderloin in the oven
Pork tenderloin
Salt
Black pepper
Butter
Minced garlic
Fresh thyme
1. Out of the fridge an hour before cooking
2. Remove the membrane / silverskin
3. Rub salt and black pepper
4. Pan-fry pork with butter to nice golden brown color
5. Add grated garlic and fresh thyme
6. Baste to absorb the flavors
7. Oven 125°C / 255°F, Until meat temperature is 68°C / 155°F
8. Let it rest under foil for about 10 minutes
3. Medium Rare Denver Steak
Denver Steak

Fresh Garlic
Black Pepper
1. Pan-fry 3-4 min per side
2. Baste for 1-2 min

4. How to cook Cowboy Butter & Beef Petite Tender
Cowboy butter sauce recipe:
300g butter
2 tbsp paprika powder
1 tsp cayenne pepper
1 tbsp dijon mustard
1 big one-claw garlic (grated)
Lemon zest (half lemon)
Squeezed lemon juice (half lemon)
Let it simmer for about 5 minutes with LOW HEAT. Heat about 2/6 on stove-top.
Then add these and let it simmer for about 2-3 minutes:
Fresh parsley
Fresh chives
1 tsp chili flakes
So cook for about total of 7-8minutes then put to the fridge to thicken a bit. The longer you keep it in the fridge more thicker it gets, so choose your sauce thickness that way to match your liking. You don't have to put it on fridge but I like to do it that way.
Petite tender pan-frying:

Pan-fry total of 5 minutes on high heat evenly on every side. Then to foil for 10minutes (you don't have to use foil, you can let it rest on plate)
5. How to cook Pork Tenderloin with Creamy Pepper Sauce
Pork Tenderloin:
50g Butter
500g Pork Tenderloin
2 tbsp Salt (or 1tbsp for less saltier version)
2 tbsp Black Pepper
1 big Minced Garlic
2 tbsp Cooking Oil
Creamy pepper sauce:
Leave pork broth on pan
2dl Cooking Cream
1 tbsp Black Pepper
1 tsp Dijon Mustard
Instructions:
1. Cut pork tenderloin to about 1cm thick pieces
2. Season with salt and black pepper
3. Pan fry pork with 25g butter on pretty high heat one minute per side
4. Add cooking oil, minced garlic and another 25g butter
5. Pan fry again one minute per side and baste at the same time
6. Move pork steaks on a plate
7. Leave broth on the pan and add cooking cream, black pepper and dijon mustard
8. Simmer to reduce the sauce a bit
9. Enjoy with mashed potatoes
