She made a pot of it when someone in the house was ill.
Loved making this Italian Chicken Soup and loved it! Its quite addictive.
On her advice, I did the stock for 6 hours to really get the goodness from the chicken bones and put in a slice of lemon to aid in the process.
I didn't have parsley so I used sage in the stock and fennel to garnish. I also used 3 chicken carcasses instead of a whole chicken which was very economical but had more impurities rising to the top to remove.
