✅ APPLE PIE Recipe

◽ 1.5 - 2 kg tart apples
◽ 4 tablespoons sugar (to taste)
◽ juice of 1/2 lemon
◽ 2-3 tablespoons semolina
✅ Preparation
Wash, peel, and coarsely grate the apples. The number of apples listed in the recipe is weighed before peeling.

Add sugar. The amount of sugar will depend on the tartness of the apples. You can add more, less, or no sugar at all. 🔽
Add the juice squeezed from half a lemon and mix everything together, heating.
Heat the apples for 10-15 minutes, or until all the juice has evaporated.

Finally, add the semolina and mix everything together. If your apples have a lot of juice, you can add a little more semolina to thicken them.

Then remove them from the heat and let them cool. Meanwhile, prepare the batter. The apples can be warm when you spread them on the batter.

◽ 5 L eggs
◽ 3/4 cup sugar (180 g)
◽ 1 cup all-purpose flour (150 g)
◽ 1 cup potato flour (180 g)
◽ 1 teaspoon baking powder
◽ 1/2 cup oil (100 g)
✅ Preparation
The apple pie ingredients should be at room temperature.
Line a baking sheet with parchment paper or grease it with butter. Preheat the oven to 170°C (350°F) with top and bottom heat (no convection) or 160°C (350°F) with convection.

Crack the whole eggs into the mixing bowl, add the sugar, and beat on high speed for 15 minutes. Using a hand mixer, beat on the highest speed for another 15 minutes. 🔽
When the foam turns light and visibly increases in volume, reduce the mixer speed and slowly add the oil. If the foam drops significantly (reduces the volume by at least half) during or after adding the oil, it means the eggs weren't beaten well enough.

Once all the oil has been added, turn off the mixer and sift the all-purpose flour, potato starch, and baking powder into the foam. Mix everything by hand, gently working it all the way to the bottom.

When the batter is smooth, transfer half of it to the prepared baking sheet, smooth it out, and immediately place it in the preheated oven on the second rack from the bottom. Bake the base for 20 minutes. Meanwhile, set the remaining batter aside and do not stir or move it. 🔽
When the base is baked, carefully remove it from the oven and place the cooled apples on top, arranging them 1-2 tablespoons apart and spreading them evenly. Then pour the remaining batter over the apples (without stirring). Smooth the top and place in a hot oven.

Bake the apple pie on the second rack from the bottom for 45 minutes at 175°C (350°F) with both top and bottom heating elements, without convection, or 165°C (350°F) with convection. After this time, remove it from the oven and let it cool. Then sprinkle the top with powdered sugar.
