Today I am sharing a recipe for enchiladas that I have been working on for awhile. If you have been following me you know that I have a family "recipe" for a red chile enchilada sauce but the ingredients can be difficult to find and the flavors of the chiles can vary greatly so it would be very hard to give exact measurements so I tested out this one! This enchilada sauce is super flavorful and so easy to put together. Plus...my kids love it! I hope you enjoy it!
Enchiladas
1-1.5 lbs chicken (you can also use ground beef, ground turkey or beans)
approx 10 flour tortillas (fajita size is my favorite - you can also use corn tortillas)
2 cups of shredded cheese blend
2 cloves garlic, minced
3 tbsp flour
1/4 tsp kosher salt
1 tbsp chili powder
1 tsp cumin
1/2 tsp garlic powder
1/4 tsp dried oregano
2 tbsp tomato paste
2 cups chicken broth (depending on your protein you can also use beef or vegetable broth)
1 tsp white vinegar
3 tbsp extra virgin olive oil
season with salt and pepper to your preference
Cook diced chicken in saute pan until just cooked through. Season with salt and pepper, add minced garlic just before chicken is done cooking. Remove chicken and any juices from pan and set aside.
Heat pan over med heat with 3 tbsp of EVOO until it is quite hot. This oil will toast your spices and cook the flour to form the base of our sauce. Once hot, add flour and spices and whisk constantly for about 2 minutes. As soon as the flour starts to brown add your tomato paste and gradually add your broth, whisking constantly. The sauce will come together and thicken slightly. Continue to cook and stir over medium heat for 8 -9 minutes. Once you can coat the back of a spoon and run your finger through it, it is time to remove from the heat. Add your vinegar and salt and pepper to taste.
Add a few spoonfuls of sauce to the bottom of a 13x9 baking dish. Fill your tortillas with cheese and chicken, roll, and place seam side down in your dish. Add another layer of sauce, sprinkle the top with cheese, and bake. Bake at 350 for 15 minutes.
Top with fresh cilantro and your choice of toppings. We love lettuce, tomatoes, avocado, and sour cream. Enjoy!
