Polygon Pen Tool [M ~ E]
When modeling, this tool can cover a ton of ground. From extruding edges, adding points, adjusting surfaces, and much more. It's worth taking a look at the documentation to learn all the keyboard shortcuts associated with this tool.

Add Edge Loop [K ~ L]
Edge loops are life. If you have clean topology, you can add edges that wrap around the model, saving a ton of time.

Complex Poles
Ideally, any single point doesn't have more than four edges coming into it. If it does have more, it's a complex pole. The issue with them comes when you try to subdivide or deform a mesh. With so many edges, the model often pinches in those areas.

Split Polygon [U ~ P]
This takes your current selection and makes a new object that only contains the selection. This is useful for pulling off some polygon faces or breaking a model apart.
