CHORIZO FETA KALE FRITTATA-

Ingredients:

1 bunch kale washed
2 links of chorizo diced- I used 9 oz. of ground chorizo
1 medium onion diced
1/2 cup of Feta or any other cheese
8 large eggs
1/2 cup of milk
1 tablespoon of flour - I omitted this when I made it
Salt
Pepper
1 teaspoon paprika
Cooking oil

Instructions:
1. Bring a large pot of water to boil. Salt water.
2. Pull stalks out of kale and cook kale in salted water until Kale is tender, about 3 minutes. Set kale aside to cool.
3. Cut up your sausage (if it isn’t ground) and onion.
4. Heat up your skillet. Add cooking oil and cook onion for 3 minutes. Add in the chorizo and cook until fully cooked though.
5. When sausage is browned, add paprika and cook for one more minute, stirring. Take out sausage to cool. Drain this if it renders a lot of fat.
6. Preheat oven to 350.
7. Mix in large bowl mix eggs, milk, flour (I omitted this), salt, and pepper. Mix well and then add crumbled cheese.
8. Squeeze water out of kale and rough chop it. Mix kale and sausage mixture into eggs.
9. Add egg mixture back to the pan, spreading evenly. Reduce heat to low and close the lid. Cook for 5 minutes. (The original recipe from Lana says to cook a little longer).
10. Take off the lid and transfer to oven. Cook for another 15 minutes or so! :)

**I added a Tbsp. of ranch seasoning to mine! I also added some jalapeños for some heat! SO GOOD!
