UPDATE: If you are using Catalina make sure you are using Mac OS 10.15.4 or later then you can build wineskin winery following the instructions on https://github.com/Gcenx/WineskinServer. Please note you will also need Homebrew (https://brew.sh/) and use the engine WS11WineCX64Bit19.0.4 or later. . I have used the latest one at the time of writing this (WS11WineCX64Bit20.0.4) using wineskin-2.9.0.9-1 on Mac OS 10.15.7.
