🏴 HONEY CAKE 🏴
Someone asked me a while ago about Honey Buns. It’s a traditional recipe using Scottish honey if possible, delicious wee cupcakes with a delicate honey sweetness. I actually decided to make as a loaf cake, but can be made either way. You can even ice it if you like! I love it served with a soft honey whipped butter, and extra honey, why not - it’s so yummy! Obviously you know I don’t live in Scotland anymore, but I used a lovely local honey from the Mornington peninsula which was just perfect.
Makes 1 loaf cake (tin size 22 x 12cm)
100g unsalted Butter
200g honey
2tsp baking powder
50ml milk
2 eggs
50g chopped mixed peel (or the zest of an orange and a lemon)
175g plain flour
50g ground almonds (almond flour)
Handful of slivered almonds
Beat honey and softened butter together till pale. Add the eggs, milk, baking powder and a tablespoon of flour then beat together. Add the rest of the flours and mix well with a spatula.
Pour into a lined loaf tin, cover with slivered almonds, and bake in preheated oven at 180c for 25-30 minutes till golden.
Let it cool a little in the tin, while that’s happening, beat 200g butter with 100g honey and a pinch of salt. Pop into a dish and leave at room temperature, you want it soft and spreadable!!
Remove the cake from the tin when still a little warm, dust with icing sugar then slice. Spread with a generous amount of honey butter and drizzle a little honey on top. Delicious.
