Last minute Christmas cake 🎄 Speculoos cake with fruit filling
Christmas is in 9 days 🎄 and if you need a great cake idea 🎂 at the last minute, my last minute Christmas cake 🎅 is the perfect choice. If you also like speculatius and cinnamon, then nothing can go wrong. The cake is super easy to bake. Anyone can make it. ❤️
The chocolate cake base is quickly made and cut into three halves so that you end up with 3 thin cake bases. You will love the speculatius buttercream and this fruit filling made of cherries 🍒🍒 is the icing on the cake. Now just attach the decorated speculatius biscuits to the outside of the cake and it's ready. This combination is simply magical and I have tried more cake than ever before.
Sure, you can also buy a ready-made cake, spread my buttercream on it and decorate it with the cookies, but then you would simply miss out on a truly special taste experience!! Chocolate cake
3 eggs
150 g sugar
1 pinch of salt
1 tsp vanilla extract
150 g buttermilk
150 g sunflower oil
190 g flour
35 g cocoa
2.5 tsp baking powder
40 g chocolate drops
Buttercream
250 g butter (soft)
250 g powdered sugar
1 tsp vanilla extract
250 g cream cheese
100 g speculaas biscuits
1 tsp cinnamon
Cherry filling
1 jar of cherries (680 g)
50 g starch
20 g sugar
1 piece of orange peel
1 piece of lemon peel
1 cinnamon stick
Decoration
75 g white Chocolate coating
15 speculoos biscuits
2 freeze-dried raspberries
