Momos are a delightful and popular Tibetan dish, often considered the unofficial national dish of the region. These steamed or fried dumplings have a minced meat or vegetable filling and are best enjoyed piping hot with a spicy tomato #sauce. Let’s dive into the details of creating momos, including the essential dough preparation:
#Dough Preparation:
Ingredients for Dough:
2 cups of all-purpose or white wheat flour
3/4 to 1 cup of water
1 teaspoon of oil
1/2 teaspoon of salt
Steps:
Take out the desired amount of flour (typically 2 cups for four people).
Mix the flour, salt, and oil in a large bowl.
Gradually add water to the flour mixture until it forms a smooth dough.
Knead the dough until it’s elastic and pliable.
Cover the dough with a damp cloth and let it rest for about 30 minutes.
Filling Options:
Meat Filling:
Ground minced meat (traditionally water buffalo or yak, but beef, pork, lamb, or a mixture work well)
Onion, garlic, scallions, cabbage, ginger, and spices (cumin, coriander, pepper, turmeric, cinnamon, and optional red chilies)
#Vegetarian Filling:
Chopped cabbage, tofu, mushrooms, onion, scallions, cilantro, garlic, ginger, and spices (vegetable bouillon, black pepper, Timur/Szechwan pepper, turmeric, cinnamon, and optional red chilies)
Assembling Momos:
Roll out small portions of the dough into circles.
Place a spoonful of filling in the center of each circle.
Fold the dough over the filling to create a half-moon shape.
Pinch the edges to seal the momos.
#Cooking:
Steaming: Arrange momos in a steamer and steam for about 10-15 minutes until cooked.
Frying: Heat oil in a pan and fry momos until golden brown.
#Sauce:
Prepare a spicy tomato sauce using tomatoes, bell pepper, green chilies, cilantro, garlic, ginger, and spices (cumin, coriander, black pepper).
Serving:
Serve momos hot with the tomato sauce.
