Ingredients:
4 tbsp Olive Oil
3 cloves Garlic
2 Red Chillies (mild)
2 * 400g Can of Chopped Tomatoes
12 Basil Leaves
400g dried Penne Rigate Pasta
Salt & Pepper to taste
Finishing:
Parmesan Cheese (grated just before use)
Normally we would avoid the use of Tinned Tomatoes. However, Tomato Tins are part of Italian Food culture and to overcomplicate what is in essence a simple recipe would be too much complication. Use good quality Tomato Tins.
Arrabbiata translated from Italian to English means "Angry" and it is named as such because of the use of Chilli. Basil is a delicate but gorgeous flavour. It is important to not mask the Basil with the Chilli. Use very mild Chillies to get the a slight kick of heat - but only ever so slight.
