Kefir Cake "Monomakh's Cap." A beautiful festive cake. This simple kefir cake recipe is tender, delicious, and most importantly, easy to prepare and use.

Ingredients
1 cake layer
1 egg
0.5 cup sugar
0.5 cup kefir
1 cup flour
0.5 tsp baking soda
2 cake layers
2 eggs
1 cup sugar
1 cup kefir
2 cups flour
1 tsp baking soda
2 tbsp cocoa
Nuts - 200g
Poppy seeds - 200g
Raisins - 200g
Cream
Sour cream - 600g
Sugar - 1 cup
Glaze
Dark chocolate - 100g
Butter - 50g
1 cake layer: Beat the egg with sugar, pour in the kefir, add the baking soda. Mix. Add flour and knead the dough. Line a baking pan with parchment paper and grease it with oil. Place the dough in the oven and bake at 180 degrees Celsius for 10 minutes. Remove the finished cake layer and let it cool.
2 cake layers: Beat 2 eggs with sugar, pour in the kefir, add the baking soda and cocoa. Mix. Add flour and knead the dough. Pre-boil the poppy seeds for 20 minutes. Grind the nuts in a coffee grinder, then roast and chop in a blender. Pour boiling water over the raisins and drain after 3 minutes. Dry the raisins. Add the nuts, raisins, and poppy seeds to the dough. Mix everything together and place in a parchment-lined pan. Bake at 180 degrees Celsius for 20-25 minutes. Remove the finished cake from the pan, let it cool, and cut into squares.
For the frosting, beat the sour cream with sugar in a mixer for about 5-7 minutes.
Assemble the cake. Place one cake layer on a serving plate. Then dip each square into the cream and arrange it on the cake in a circle, repeating until all the pieces are used up. Drizzle the remaining cream over the cake again.
For the glaze, melt the chocolate with plums in a double boiler. Add butter and drizzle it over the cake from top to bottom. Let the cake soak for a few hours. Enjoy your tea!
