Here is a video demonstrating how my parents showed me how to make Portuguese sausage (called linguiça). My family comes from Pico Island in the Azores.
I used about a head of garlic, 4 TBSP salt, 1/4 cup of pepper paste (if using mild pepper paste, you can add pepper flakes for heat), and about 3 TBSP of paprika. Stir until you create a paste, and then add a bottle or can of beer, about 1 1/2 cups of wine, and about 4TBSP of red wine vinegar. This was what I used for my marinade, but sausages are made to taste, and you will have to adjust to your liking. I used 8 lbs of pork shoulder that had a nice ratio of meat and fat. The pork shoulder should be cut into small pieces as I show in the video.
