INGREDIENTS for 2 people:
200g brown rice
1/2 onion
75g mushrooms
1/2 glass of wine
400ml chicken broth
50g fat-free cheese
a few basil leaves
salt
olive oil
PREPARATION:
The night before, soak the rice. This hydrates it and helps it cook more quickly.
The next day, in a pot, add a splash of oil. Add the onion and mushrooms and cook over low heat. After 5 minutes, add the white wine and let the alcohol evaporate. Then add the rice and mix.
When all the wine has been absorbed, add the broth little by little. First, add a ladleful and mix constantly. When all the broth has been absorbed, repeat the process, adding the broth little by little and stirring constantly. This is the secret to a great risotto.
Once the rice is al dente, add a splash of olive oil and grated cheese and mix. Serve and sprinkle with a few basil leaves.
