Cabernet Sauvignon originated in Bordeaux in the 17th century as a cross between Cabernet Franc and Sauvignon Blanc. For a long time, it was the most widely planted and cultivated grape variety in the world until it was surpassed by Merlot in the 1990s. Along with both varieties, it is part of the Bordeaux blend. Cabernet Sauvignon is very easy to grow, grows in a wide range of climates, and requires little cultivation.
This grape tolerates dry soils, temperature fluctuations, light night frosts, scorching sun, and lack of rain. Furthermore, it is resistant to gray mold. And its unique composition and taste are unmatched!
Since its birth in Bordeaux, Cabernet Sauvignon has successfully spread to almost every wine-producing country. Today, it is the main grape variety in many New World wine regions: the USA, Australia, and Chile. In Italy, it forms the basis of such famous Tuscan wines as the legendary Sassicaia.
The classic red wine made from Cabernet Sauvignon is characterized by high acidity and tannins. When grown in northern latitudes, it produces subtle flavors of blackcurrant, mint, and pepper. To achieve full maturity and develop its full range of flavors, the young wine should be stored for about 10 years.
