These healthy blueberry oatmeal muffins are super easy to make with only 5 ingredients! You don`t need any oil for this recipe and they are naturally sweetend with bananas and the berries! Here`s what you need...

Healthy 5 Ingredients Blueberry Oatmeal Muffins
INGREDIENTS (9 muffins)
1,5 medium banana (200 grams in total)
3/4 cup (100 grams) oat flour*
4 eggs (210 grams)
1 tsp (4 grams) baking powder
1/2 heaping cup (90 grams) blueberries, fresh**
3 tbsp (30 grams) blueberries, fresh
INSTRUCTIONS
1. Line a muffin tin with 9 cupcake cases or grease it. Or use a sillicone mold without greasing like I did. Set aside.
2. Pre-heat the oven on 180C (360F).
3. Take a large bowl and put the peeled bananas into the bowl. Mash them with a fork into a puree.
4. Add the oat flour, eggs and baking powder to the banana puree. You can optionally add some sweetener like honey here if you like. Stir and mix with a fork until all ingredients are fully incorporated.
5. Add the 1/2 cup (90 grams) of blueberries to the batter. Gently stir them in using your fork.
6. Take a spoon or icecream scoop and divide the batter over the 9 cupcake cases or muffin tin. This will be around 2 scoops / spoons per muffin.
7. Divide the 3 tbsp (30 grams) of the blueberries on top of the muffins. This will be 2-3 blueberries per muffins.
8. Put the muffin tin / cupcake cases into the pre-heated oven and bake for 20 minutes on 180C (360F) until fully cooked and golden brown.
9. Take the muffins out of the oven and let them cool on a rack until completely cooled.
10. Take them out of the tin / case and enjoy!

NOTES
I used gluten free rolled oats which I blended with a coffee grinder into gluten free oat flour.
** You can use frozen blueberries. They will turn your batter a bit purple / greyish, but are a cheaper option.
TIP
1. Add a little lemon zest to the batter!
2. Add around 3 tbsp (30 grams) of honey to the batter if you like a bit of more sweeteness.
