I have over 400 hours into the game, with the last 80-90 hours just working on this subject of Stat and Stat Growth alone. So trust what I have to say. I can't guarantee you these are the best methods, there might be better ones out there, but this is what has worked for me.
Actual details about Stat/Stat Growth
1) Boosters
The only 3 boosters you need are for Strengh, Magic, and Dexterity. Avoid everything else.
2) Classes
Equipping the right class will play a big part in what role your character plays. Each class has their own bonuses, skills and abilities. Choose the right one.
You wanna know what really grinds my gears? People who think Mortal Savant is a good class for Felix. If you currently have a Mortal Savant Felix, please unsubscribe and I wish you a good day. (Not really, I need the subs)
That is literally the same thing as saying Hanneman makes a good physical attacker. They both have 30 in the opposite attack stat in which they are horrible in. When have you heard a dude say "Yeah Hanneman was my main Frontline Damage Dealer"
The only time this is acceptable is if you like Cyril.
3) Tea Time
You can increase any character(s) charm stat by two every month including Byleth and Guyleth. You can increase every single playable characters charm by 2 every month if you wanted to.

5) Hidden Bonuses within Classes
Like I said, it would be best to unlock all the classes for a certain character if you want to build them up as strong as possible. The more classes you unlock, the more you may be able to find the Stat Bonuses.
6) Use Step 4 as Early as Possible.
If you can recruit a student outside of your class on the first day, you can have them gain more stats as opposed to obtaining them later on when they are a higher level.

Combine all of these over the course of one playthough and you to, could have yourself a monstrous unit of a character.
