Vegan Mashed Potatoes with Horseradish & Garlic
This is my go to recipe for mashed potatoes. I put this over my "Vegan Shepherd's Pie" or serve them with any other dish, just like you would any mashed potatoes. Some people say The Cheesecake Factory uses horseradish in their mashed potatoes recipe, and even though these do not taste as good....they are still very flavorful. Enjoy!
4 c. diced potatoes (peeled or unpeeled)
2 Tb. prepared Horseradish
1/2 - 3/4 c. unsweetened non-dairy milk
1-3 garlic cloves
2 Tb. vegan butter
salt and pepper to taste
