Spain is the champion of ham ! And there is none better than 100% iberico Pata negra (the black hoof) These black pigs are fed a diet almost exclusively of acorns, and the nutty sweetness is amazing ! Now...it is close to $100 per pound, but you can order 2 ounces worth of slices like I did here. Always enjoy after the jamon has been at room temperature for about 20 minutes.
