Rice pudding, or on arabic Rez bi Haleeb is a delicious and creamy rice pudding - gently flavored with orange blossom water and mastic - and garnished with raisins, shredded coconut and pistachio. It is a very soft and creamy dessert, which has that wonderful sweet flavor and aromatic hints of floral.
This savoury dessert is popular in Middle East and especially during the month of Ramadan. My recipe is from the Lebanese cuisine and is very simple, using only a handful of ingredients. It takes 35 minutes cooking time, because there is no added corn starch. Instead I am using heavy cream (38%fatt) to give the dessert some starch and the rice gives starch too. The result is an absolutely soft, sweet and creamy dessert.
