Biking & Foraging: Cooking Chicken of the Woods on Pine Creek Rail Trail
This 63-mile rail trail runs through the Pine Creek Gorge (also known as "The Grand Canyon of Pennsylvania")
This area had a lot of rain recently and was exploding with mushrooms! I could barely bike for 5 minutes without seeing a cool fungi!
Mushrooms I found:
Hygrocybe- waxy caps
Nostoc commune - not actually a fungi but a cyanobacteria!
Laetiporus sulphureus- chicken of the woods
Xylaria
Artomyces & Ramaria (coral fungi)
Birds nest fungi
Russula
Marasmius
Gyroporus
Blue staining bolete (Cyanoboletus?)
Mycena haematopus
I dry sautéed the chicken of the woods and then added some butter and salt. I cooked up some cheese Ravioli and it was hecking delicious!!
