Enzymes are mostly composed of proteins (a few are RNA) and their activity is easily influenced by temperature, chemical environment and other factors, and when enzymes are exposed to high temperatures, their protein molecular structure is irreversibly damaged, thus completely dissipating their enzymatic activity. The purpose of tea fixation:
1. 2. Removing the part of moisture, so that leaves change from hard to soft, facilitating kneading and shaping.
3. Remove the green grass smell of the fresh leaves and give off a charming tea aroma.
